Coconut Flan

Yesterday was one of those days where I felt like devouring everything and anything I could get my hands on (watch out kitchen!) — I had the appetite of a lioness, and could not control it. Wrawr!

I know this happens to a lot of women as well (thank goodness I am not the only freak): one is decently full, but for one reason or another, our appetites simply cannot be satiated. Now, I am not quite sure men go through the same thing. Do you, men? It would only be fair if you did — it’d be devastating for me to know that there is yet another “nature-brought-hardship” you don’t have to go through!

Well, because of my uncontrollable appetite yesterday, I had a lot of fun eating all sorts of stuff. My mouth and palette found themselves in the biggest and tastiest party of the year. One of my favorite items I ate was a dessert (because of course it was!), and let me tell you…you are in luck today, because I am sharing that particular recipe via this post for you to have!

Every bite of this sinful dessert is packed with delightful flavors of sweetness and coconut. If you like coconut, this dessert is a must try. If you don’t, then this dessert is probably not for you.

This ‘Flan de Coco’ (or ‘Coconut Flan’, when translated to English) is another one of my mother’s recipes. When I was little, my mom used to make this Flan for some of her formal dinner invitations, and all of her guests always devoured it. I learned that if I wanted to get a taste of it, I needed to sneak in the kitchen and grab myself a little piece before the guests were done with their entree. Ha! One’s gotta do, what one’s gotta do, right? I had learned the trick of the trade. Good thing I am older now and I can make it all on my own; no need for me to be tricky anymore! 😉

Coconut Flan

Serves: 12 slices
Ingredients
  • 7 eggs
  • 1 can condensed milk
  • 1 pound sugar + 1 cup sugar
  • 2 cups fresh coconut water
  • 1 coconut meat (fresh and grated)
Instructions
  1. Prep your ingredients ahead of time.
  2. Make the caramel:
  3. Place flan maker under low heat; add in 1 cup of sugar and slowly see it melt (allowing it to reach a light brown color, but be careful not to burn it.) As the sugar melts, carefully move the flan maker around so that the caramel sticks halfway up to the walls of the flan maker. Set aside and let cool.
  4. Place small pan under medium-high heat, and add in coconut water, coconut flesh and 1 pound of sugar. Bring to a boil and boil until all the water evaporates and is absorbed by the coconut and the sugar. Set aside and let cool.
  5. On a mixing bowl, beat your eggs using a whisker; add in condensed milk and cooled down coconut-flesh to your eggs. Mix well; pour mixture in flan maker (on top of caramel) and cover with lid.
  6. Add water to large pot and bring to a boil. Once ready, add in covered flan maker and allow it cook bain-marie for about 1 hour (or until it passes the knife-test.)
  7. Important: let flan cool completely before transferring it to a nice serving dish. Slice and ENJOY!
