Have you had tofu scramble before? If you haven’t, we must rectify the situation. And I have just the recipe for you!
Tofu scrambles are so versatile…they can be made in so many different ways (with various vegetables, herbs and spices!)
They can be enjoyed with a variety of side dishes (bagels, toast, tortillas, potatoes, etc.) and its something one can have any time of the day!
They are satisfying, filling, good for you, and easily digested. Such a no brainer, really!
So what are we waiting for? Let’s get our tofu scramble on, shall we?
This particular Confetti Tofu Scramble recipe is made with nothing but fresh, colorful vegetables. I’ve also added some fun spices to give it an added punch of great spicy flavor.
This recipe is easy and fun to make. You’ll see. Once you’re done, be sure to accompany your scramble with your favorite side dish and beverage. I had mine with a side of perfectly toasted bagels (coconut oil spread on top of the bagels instead of cream cheese), and a large glass of orange juice. It was goooooood!

- 14 ounces tofu (firm)
- 1 purple onion, chopped
- 5 garlic cloves, finely diced
- 1 red bell pepper, chopped
- 1 cup asparagus, cut into 1” pieces
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon cumin
- ½ teaspoon chili powder
- ½ cup filtered water
- Olive oil (for sautéing)
- Prep your ingredients ahead of time. ☺
- Using clean water, rinse your tofu and pat dry with paper towel. Once dry, place tofu in medium sized mixing bowl and break it down into small crumbly pieces with a fork. Set aside.
- Place all spices in small sized-mixing bowl, add ½ cup of filtered water and mix well. Set aside. (This is your spice sauce!)
- Place large frying pan under medium heat. Once hot, add some olive oil in and sauté garlic and onions for about 5 minutes. Add in tofu and sauté for another 3 minutes.
- While your tofu is sautéing, place medium frying pan under medium heat. Once hot, add some olive oil in and sauté asparagus and bell peppers for 2 minutes.
- Add half of your spice sauce to the tofu mix, and the other half to the asparagus and bell pepper mix. Cook separately for another minute or so.
- Add asparagus and bell pepper mix into the large pan where the tofu mix is, and cook for about 2 more minutes.
- Serve hot and accompany with fresh herbs (like cilantro or parsley), with your favorite carbohydrate (like bagels, breakfast potatoes, or warm whole wheat tortillas) and with some hot sauce (like Cholula!)
