Two days ago I shared my delicious Dino Kale Super Salad recipe with you guys, and in that blog post, I promised to share two recipes that would accompany that salad well.
Well, just like I promise, I deliver! 😉 And so here I am, ready to share one of those two fun recipes with you! The other one is to come soon…so keep on staying tuned! 😉
This one is called “Farro con Limón”. And it’s YUM.
It’s one of those side dishes that is super easy to put together and extremely fresh!
This particular Farro recipe is tangy and full of interesting spice! The lime I added to it is what gives it its tanginess…the cumin, cayenne pepper, garlic powder, black pepper and sea salt are what give its awesome zing…and the cilantro that I tossed in at the end, is what really bring this dish home!
Fresh cilantro is the bomb. I try to use it as much as possible. It awakens the senses, and also, it is so good for you!
Did you know that cilantro is a powerful cleansing agent that can help your body get rid of toxic metals (it is one of the few herbs that can do this)? So cool! Also, cilantro is full of wonderful antioxidants and healing phytonutrients that can help your body fight against free radicals, which can cause a variety of chronic diseases. Cilantro can help you sleep better, lower your stress, and help with a better digestion. Ahhh – it’s just too great! So of course, this Latin American inspired Farro recipe had to contain this wonderful herb. When I think cilantro, not only do I think fresh and healthy, but I also immediately think Latin food! In Latin America, this herb is used left and right. 🙂 In everything, on everything, and amongst everything. We all love it.
Be sure to spice this Farro recipe per your liking. Below you will a guide as to how I spiced mine up, but feel free to bring your own creativity to the table and use your sense of taste to reach that perfect spice balance for this dish.

- 1 cup faro, rinsed
- 4 cups vegetable broth
- 2 cups filtered water
- 1 small bunch cilantro, finely chopped
- 1 lime, juice of & zest
- 1 teaspoon garlic powder
- ¼ teaspoon cayenne pepper or cumin (pick your favorite, or use both!)
- 1 teaspoon sea salt (or to taste)
- 1 teaspoon black pepper (or to taste)
- Prep you ingredients ahead of time.
- Add farro, vegetable broth, and water to your pot, place under high heat and bring to a boil. Once it boils, reduce to a simmer and cook for about 30 minutes.
- Once it’s done cooking, drain the remaining liquid and pour farro into a mixing bowl.
- Add in the lime juice, lime zest, and spices; combine well.
- Lastly, fold in the chopped cilantro. Serve hot and enjoy!
