Everything else seems like it’s some sort of a cheat meal to me. Don’t ask me why…saying this out loud even sounds crazy. But it’s true. That’s how my brain works. It might be the fact that a simple grilled chicken breast has really low fat content, or the fact that whenever you hear diet, you hear the word chicken breast a few seconds later. I don’t know! Don’t get me wrong though, I love chicken and all the wonderful recipes you can use it for… it just sounds like THE healthiest protein to me, that’s all. But I sort of like that about chicken; it’s my safety-net food item. When I’ve gotten out of line, eating way too many chocolate chips and nut butters, I turn to some fresh veggies and a nice piece of juicy chicken breast. That’s what’s happening today. I have come to realize I’ve been over doing the chocolate chips, nuts, and healthy fats combo. Took me 1 month to realize this (my pants fit super tight! Yikes!) and now it’s time for some healthy eating at the Lewis’ home! Today I’ve prepared a chicken recipe that I enjoy a lot, accompanied by some hot sriracha sauce. The best part is…it’s easy and you can prepare it in bulk to enjoy throughout the week. I had never broiled chicken before, so I was a bit nervous that I would burn them. However, it turned out great (followed the directions exactly)! Thanks for sharing! My family’s christmas turkey and chicken will be grain fed, skin on, roasted, …from a packed processing plant. I’m very…at odds with this…but if I don’t start eting the chicken in this location, I’m reduced to eggs and fish all. the . time. I’m lost. Mariel Lewis December 26, 2012 Hi Jill! That’s unfortunate. It’s ok for you to have non-organic food once in a while, specially if your body is craving chicken and all they have around is non-organic. Just be sure that the majority of your protein intake comes from an all natural, unprocessed meats. Hang in there and get creative with how you use your fish and eggs! I think chicken breasts are normally difficult to grill because I always seem to overcook them. These turned out perfectly! Even my husband was impressed! Thanks for the recipe!
