I HAVE to eat grilled chicken breast  when I want to feel like I’m having a super lean/healthy meal. Everything else seems like it’s some sort of a cheat meal to me. Don’t ask me why…saying this out loud even sounds crazy. But it’s true. That’s how my brain works. It might be the fact that a simple grilled chicken breast has really low fat content, or the fact that whenever you hear diet, you hear the word chicken breast a few seconds later. I don’t know!

Don’t get me wrong though, I love chicken and all the wonderful recipes you can use it for… it just sounds like THE healthiest protein to me, that’s all. But I sort of like that about chicken; it’s my safety-net food item. When I’ve gotten out of line, eating way too many chocolate chips and nut butters, I turn to some fresh veggies and a nice piece of juicy chicken breast.

That’s what’s happening today. I have come to realize I’ve been over doing the chocolate chips, nuts, and healthy fats combo. Took me 1 month to realize this (my pants fit super tight! Yikes!) and now it’s time for some healthy eating at the Lewis’ home! Today I’ve prepared a chicken recipe that I enjoy a lot, accompanied by some hot sriracha sauce. The best part is…it’s easy and you can prepare it in bulk to enjoy throughout the week.

I made this recipe last week when my boyfriend and I were craving a simple chicken dish. I had never broiled chicken before, so I was a bit nervous that I would burn them. However, it turned out great (followed the directions exactly)! Thanks for sharing!

Meagan! That is great to hear! Broiling is a great alliterative for those of us who don’t have space for a grill ;). I’ll be posting more broiling recipes soon!

Simply Irresistible!!! Thank you. This is how I will be make much of my chicken breast in the future. I’m new to eating Paleo and this will definitely help.

Were your chicken breasts frozen?? I tried this and followed the recipe exactly with defrosted chicken and the foil caught on fire right after I flipped them?

Hi Nicole! My chicken was defrosted for sure. I’m sorry that happened to you, it’s never happened to me before and I make this “Simple Chicken” recipe every week. Maybe your baking sheet was too close to the flame? :/

What temperature is the oven?….sounds delicious…I normally fry the chicken.

Hi Tom! I broil it on “high”. No temperature, just set the broiler on high. :)

Huge problem I’m having now: I live in Middle of nowhere…there are no organic or free range anything. My family’s christmas turkey and chicken will be grain fed, skin on, roasted, …from a packed processing plant. I’m very…at odds with this…but if I don’t start eting the chicken in this location, I’m reduced to eggs and fish all. the . time. I’m lost.

Hi Jill! That’s unfortunate. It’s ok for you to have non-organic food once in a while, specially if your body is craving chicken and all they have around is non-organic. Just be sure that the majority of your protein intake comes from an all natural, unprocessed meats. :) Hang in there and get creative with how you use your fish and eggs! You’ll be amazed at all the different dishes you could make.

I was looking for an easy chicken recipe for tonight. This was excellent! I think chicken breasts are normally difficult to grill because I always seem to overcook them. These turned out perfectly! Even my husband was impressed! Thanks for the recipe!
