I am so excited! Let me tell you why…
This last week, we finally started back up with the remodel of our new apartment in downtown Boise. The place had previously been destroyed by one of the contractors we had hired (him and his team had no clue of what they were doing…at all), and since then, we’ve had to work various roadblocks to get the apartment back up and ready to be remodeled by the right people. Now, we have a fantastic team of contractors working for us and just in one week, the’ve done incredible progress. The apartment is taking shape and looking oh-so glamorous! We are doing so many cool changes to it and adding great finishings; I cannot wait to share pictures with you when it’s ready! It is a very thought out and well distributed open concept (courtesy of my husband and myself, as we re-designed it ourselves), and so, my new kitchen is going to be fun to work in, as it has a great view of Downtown Boise. I cannot wait to move in, it’s going to be a dream. It will be specially rewarding since my husband and I have been wanting to own a place there since 2010, and we have been planning this particular remodel for over four months now. 🙂
Anywhoo…let’s now talk about food (our fave!), shall we?
This special recipe has become my husband favorite! Seriously. He ate all six chicken breasts this last week (I barely snatched a bite!) and he kept telling me over and over again “this is so good!”. And if you cook, you’ll understand how those four words are the best kinds of words to hear when someone eats your food. I was pretty pleased. So pleased in fact, that I decided to share my little recipe with you guys today!
This Salsa-Lime Chicken recipe truly is the easiest thing in the world and will take you barely any time at all to prepare (then let the crockpot do its magic!)…just for that, it will become your favorite chicken recipe ever!

This looks so yummy! Do you think if I halved this recipe it would take about 3-4hours to cook?
Hi Kimberly! No, I think that chicken still needs to slow cook for the 7-8 hours; it might take a bit less…like 6 hours? Try it out. 🙂
Just found your site/Facebook page. Made this for dinner yesterday. It is hard to find recipes for the crockpot that don’t contain a lot of junk. This one was very tasty and the chicken, of course, was super tender. Thanks! Going to give the turkey meatballs a try next. 🙂
Awesome to hear that Lori! 🙂
OH YUM! I love my crockpot & I love chicken…..this looks like an amazing recipe……hmmmm, seeing as I am off on Friday – sounds like this will be dinner!!
Thank you for sharing!!
Of course! Hope you like it, Tracy!!! 🙂
